One tool, two edges. We pair a serrated blade and a flat blade on the same glacial silver body so you are not hunting for a second peeler when the tomatoes show up. The body is high-grade stainless, formed in one piece, which is the reason nothing wobbles or snaps where a handle usually meets a blade. At 0.7 by 6.8 inches it suits any hand and either hand.

Anatomy of the tool

Blades

Serrated and flat, side by side

The flat edge takes firm skins; the serrated one grips the smooth and sticky ones. Carrots, ginger, cucumbers, tomatoes and pears all get the edge they need without a trip back to the utensil drawer.

Care

Seamless body, nothing to loosen

Formed from one piece of high-grade stainless, there is no joint between handle and head to work loose over time. Wobbly blades and broken handles are a construction problem, so we removed the construction.

In Use

The eye remover at the tip

A pointed eye remover is built in for digging out potato eyes and blemishes. It also handles bruised spots on carrots and the knobby ends of ginger, which is where most root vegetable prep actually slows down.

Grip

Non-slip, left hand or right

The handle is shaped for either hand and for any hand size, with a non-slip surface that holds through zesting an orange or peeling garlic. Comfort here is mostly a matter of not having to grip hard.

From the sharpening bench

Use the eye remover before you peel, not after; digging into a bare potato tears the flesh, while a spot with the skin still on comes out cleanly.
