Most kitchen scissors fail at the hinge, springing open the first time you ask them to split a chicken back. This black pair answers with mass. The blades run 8 mm thick, roughly 5.3 times the 1.5 mm stock used in ordinary shears. Steel is high-carbon German molybdenum-vanadium, precision-forged and hardened to HRC 58 plus or minus 2, and the handle takes a left or a right hand without argument.

Anatomy of the tool

Blades

Eight millimeters through a turkey joint

Thickness is what stops a shear from spreading mid-cut. At 8 mm these jaws carry about 5.3 times the metal of standard 1.5 mm blades, so chicken bone and turkey joints part instead of wedging the pair open.

Blades

Fifty-eight Rockwell, forged not stamped

German high-carbon molybdenum-vanadium, precision-forged and brought to HRC 58 plus or minus 2. The hardness is why the edge survives bone contact without chipping, and the alloy is why it leaves the sink without rust spots.

Grip

Black handles that suit either hand

The grip is shaped the same on both sides, so a left-handed cook gets the same leverage as a right-handed one. It is wide and steady rather than springy, which helps when grip strength or sore joints are the limit.

In Use

From raw chicken to the salad bowl

One pair covers poultry, herbs, pizza crust, crab and lobster shells, with toothed nut-cracking grips between the handles. The stainless build washes down completely, so it moves from the raw-meat board to tableside.

From the sharpening bench

Rinse and dry the pivot after poultry, dishwasher safe or not. Bone dust packs into the joint, and that is what makes a heavy shear start to feel stiff.
