Same engine as our red pair, finished in black and set up with a safety lock that holds the jaws closed between jobs. The 3.5 mm molybdenum-vanadium blades are tempered for strength and stain resistance, and the 5.6-inch aluminum alloy handle has a non-slip surface for wet hands. The spring is internal, so there is nothing on the outside to rust or snag on a drawer.

Anatomy of the tool

Lock

Jaws that stay shut in the drawer

A spring-loaded shear wants to be open, which is useful on the board and awkward everywhere else. The safety lock closes the pair down for storage so you are not reaching into a drawer full of standing blades.

Blades

Molybdenum-vanadium, stain resistant

Molybdenum and vanadium in the alloy buy corrosion resistance and strength at once, which matters when the same pair goes from raw chicken to the sink and back several times in one evening.

Grip

Non-slip black over alloy

The handle is aluminum alloy under a non-slip finish, 5.6 inches of it, so greasy fingers still steer the cut. Nothing to flex, nothing to creak when you lean into a stubborn joint.

Care

Wrench out, wash, reassemble

These do not come apart by hand, and that is on purpose. When they need a full clean or a spring change, a wrench backs out the bolts; two spare springs ship with the shears for exactly that.

From the sharpening bench

Lock the jaws before they go in the drawer and leave them unlocked on the counter during prep. The spring will handle the reopening for you all evening.
