Red was not a styling decision. A shear this heavy disappears under cutting boards and foil pans, and a red handle comes back out of the clutter. Underneath it is the 8 mm build: blades about 5.3 times thicker than standard stock, high-carbon German molybdenum-vanadium at HRC 58 plus or minus 2, with a rust-resistant finish that keeps looking new after washing.

Anatomy of the tool

Blades

Rib racks and lobster claws in one pass

The 8 mm grind gives the jaws enough body to close on a rib rack or a lobster claw without flexing. Thin 1.5 mm scissors twist under that load, which is how they end up loose at the pivot by the end of a grilling season.

Care

A finish that comes back from the sink

Rust retires more kitchen shears than dullness does. Molybdenum-vanadium steel and the finish over it shrug off repeated washing, so the red pair looks the same after a year of chicken nights as it did new.

Grip

Red handles, pressure spread flat

The handle absorbs shock and is symmetrical, so the force of a bone cut spreads across the whole palm instead of loading two fingers. Mincing a bunch of herbs stops being a wrist exercise halfway through.

In Use

The pair that lives with the grill tools

It portions a whole chicken, snips bacon, trims pastry dough, cracks a walnut in the toothed grip and pops a bottle cap. That covers most of what a backyard cook walks outside carrying.

From the sharpening bench

Open the pair all the way and wipe both inner faces after cutting fatty skin. Grease left between the blades is what makes two good edges drag on each other.
