This is our black colorway of the come-apart utility shear, and it earns its drawer space by replacing five small gadgets. The 3cr13 stainless blades run 3 mm thick, so they stay rigid through ribs and chops rather than flexing at the tip. A metal bolt holds the halves together under load and still lets you split them for washing. Forty years of blade work sits behind the grind.

Anatomy of the tool

Edge

Thickened stock, little flex

Three millimeters of blade stock is a lot for a kitchen shear, and the payoff is rigidity: the tips stay aligned through chicken bone and rib cartilage instead of spreading apart and chewing at the cut.

Set

Bolt and low-profile nut

The two halves meet on a strong metal bolt topped by a nut that sits almost flush, so nothing catches your palm. It holds firm while you cut and releases by hand when you want the blades separated.

In Use

From raw chicken to packaging

Chicken, ribs and chops come apart without a board. The same pair trims dough, snips herbs and opens stubborn packaging, which is why it tends to live on the counter rather than in a drawer.

Care

Rust and corrosion held off

3cr13 is chosen for corrosion resistance as much as for hardness. Rinse, split the halves, wipe both faces dry and the shears go back together clean; standing water in the pivot is the only real enemy.

From the sharpening bench

Reserve the bone scoop for bone. Plastics and daily snipping belong on the front third of the blade, where the edges meet squarely and the sharpness lasts longer.
