The spring is the point. Break down two or three chickens with plain scissors and your hand does double duty, because you pull the jaws back open yourself every time. These reopen for you, so slick fingers only have to squeeze. A thumb-activated lock then clicks them closed in roughly 0.2 seconds, which keeps a sharp pair shut in the drawer instead of waiting there open.

Anatomy of the tool

Spring

The jaws reopen without your hand

A spring between the handles pushes the blades back open after every cut, so your grip only works one direction. On a whole chicken that halves the effort, and it still works when your fingers are too greasy to pull anything apart.

Lock

A thumb flick, about two tenths of a second

The lock sits under the thumb rather than being a sliding tab you need two hands to find. It closes in roughly 0.2 seconds, which is the difference between latching the pair every time and leaving it open among the utensils.

Blades

Three and a half millimeters, tempered for bone

The blades are precision tempered at 3.5 mm in rust-proof molybdenum-vanadium under a corrosion-resistant coating. Poultry bone gives way, and the staining that usually follows raw meat work does not set in.

In Use

Debone, scale, crack, pry

Debone poultry, crack walnuts in the toothed grip, scrape fish scales on the serrated edge, cut pizza crust, trim pastry, snip bacon, clean shrimp, lift a can lid. Aluminum handles take roughly ten times the pressure of a regular scissor frame.

From the sharpening bench

Set the lock before the pair goes near a dish rack or a drawer. A spring-loaded shear stored open is the one kitchen tool that reaches back when you reach in.
