Storage

Two drawers, two silver pairs

Put one in the main prep drawer and the other where cooking actually happens: the grill cart, the basement kitchen, the camper. A shear you have to go fetch is a shear you end up replacing with a paring knife.

Blades

Leverage from a tempered 3.5 mm jaw

Precision tempering keeps a 3.5 mm blade rigid enough for poultry bone without the mass of a thick shear. Seat the bone near the pivot and close steadily, and the cut lands where the leverage is highest.

Care

Coated for the raw-protein shift

Raw chicken, shrimp and fish are hard on bare steel. A corrosion-resistant coating over rust-proof molybdenum-vanadium takes that work, while the thumb rest and non-slip handle hold the grip when things turn slick.

In Use

Both pairs carry the full kit

Each silver shear has the toothed nutcracker between the handles, the serrated scaler for fish, a pry for can lids, and edge enough for bacon, dough and pizza. The second pair is short of nothing.

From the sharpening bench

Hand wash one pair while the other works. Alternating them keeps a dry shear in the drawer and keeps neither pair sitting damp at the pivot overnight.
