This is the plain-steel version of the 8 mm shear, with no color on the handle to date it against the rest of your tools. Blades are high-carbon German molybdenum-vanadium at HRC 58 plus or minus 2, around 5.3 times thicker than the 1.5 mm steel in ordinary scissors. What the thickness buys is a cut that crushes nothing: dense raw meat, woody herb stems and cold pizza all part rather than tear.

Anatomy of the tool

Blades

Dense meat parted, not crushed

A thin shear pushes food aside before it cuts, which is why herbs bruise and crust shatters. These jaws bite first. Raw chicken thigh, thick rosemary stems and a cooled slice of pizza come apart in one closing.

Blades

Hardness that outlasts the first dull week

Ordinary stainless goes soft at the apex within a few uses. At HRC 58 plus or minus 2 this alloy holds its edge far longer, and the rust-resistant surface means a trip through the wash is not what finishes it.

Grip

Ambidextrous and left uncolored

Both handles are shaped alike, so the pair behaves the same in either hand and nobody has to relearn it. The silver finish sits quietly next to whatever else lives in the knife drawer.

In Use

Five drawer tools in one silver pair

Poultry shears, vegetable snips, pizza cutter, seafood cracker and nutcracker, all in a single tool. The stainless build cleans down between raw and cooked work, so it can finish the job at the table.

From the sharpening bench

Run the pair under hot water before the first use of the day. Warm steel and a damp pivot cut quieter and cleaner than a shear taken cold out of a drawer.
