Same 7.5-inch cleaver as our santoku box, different partner. Here it is the chef knife, which is sharp enough to glide through a ribeye or a raw potato and is the pattern most cooks reach for by habit. Balance was the brief: it sits in a casual grip or a pinch grip without arguing, and the non-slip handle holds through wet hands. A finger protector comes with it.

Anatomy of the tool

Pairing

Chef knife for the cut, cleaver for the bone

If you want a cleaver and the knife you already use every day, this is the box. Precision cutting belongs to the chef blade; disjointing, bone and thick carving belong to the cleaver. Our other pair swaps the chef pattern for a hollow-edge santoku.

Blade

Ribeye and raw potato, one stroke each

The chef blade is ground fine enough to pass through a ribeye without dragging and through raw potato without splitting it. That is the test we use internally, because dense starch and loose muscle fail a dull edge in opposite ways.

Grip

Balanced in whichever grip you learned

Hold it casually or choke up on the blade like a line cook and the balance point behaves the same. The non-slip handle is the part that matters at the sink: it stays put when your palm is wet or oily rather than rolling in the hand.

In Use

Disjointing and the thick carve

The cleaver takes chopping, mincing, slicing, boning and bone-hacking, and the spine smashes garlic or breaks a joint loose. Keep the chef knife out of that work entirely and you will go a long time between sharpenings.

From the sharpening bench

Use the included finger protector while you learn the chef blade, and keep it away from the sink basin: a knife lying under suds is how most kitchen cuts happen.
