A knife set answers the first question and creates the second one: what keeps these five sharp a year from now. So both go in the same box. The set runs an 8-inch chef, a 7-inch santoku, a 6-inch boning knife, an 8-inch bread knife and a 5-inch utility knife. The sharpener beside them carries six angle settings, a tungsten coarse slot, a ceramic fine slot and a scissor channel.

Anatomy of the tool

Pairing

The set and its upkeep in one box

Four of the five knives take an edge from the sharpener that ships with them; the bread knife is the exception and lives on its serrations. Set the dial once and the chef, santoku, boning and utility blades all follow the same bevel.

Angle

One dial for four of the five

Fourteen through twenty-four degrees in six steps, changed by twisting the dial. The guide on the body suggests which number suits which knife, so the santoku can run finer than the boning knife with no measuring involved.

In Use

Chef, santoku, boning, bread, utility

The chef knife handles most prep, the santoku chops, the boning knife follows joints, the bread knife saws crust and the utility blade does the small work. The gentle curve on each profile is what makes slicing and mincing feel precise.

Care

Three passes, not thirty

Pull each blade forward through the coarse slot only when it has gone dull, then finish in the ceramic. Staying in the ceramic slot between real sharpenings removes far less steel, and the knives last longer for it.

From the sharpening bench

Sharpen the whole set the same afternoon you unbox it, so you learn what the factory edge feels like against the wheels. After that you will tell by feel when a blade has drifted.
