Most pull-through sharpeners force a Western angle onto whatever you feed them, which is how a Japanese-style edge gets ruined by its own upkeep. That is not a problem here. The santoku leaves the factory at 14-16 degrees per side, and the sharpener in the box dials to exactly those numbers. You maintain the edge the grinder gave the blade instead of slowly converting it into something blunter.

Anatomy of the tool

Pairing

The dial has a setting for this blade

Set the dial to 14 or 16 and the sharpener follows the grind the santoku already carries. Feed that same knife through a fixed 20-degree slot a few times and you end up with a thicker edge that nobody chose on purpose.

Blade

A 53 mm face that sheds food

The santoku is forged EN1.4116 and stands 53 millimeters tall at the heel. That height keeps knuckles off the board and gives slices less reason to stick to the steel, so a pile of cabbage comes away in sheets.

Edge

What 14-16 degrees buys you

A finer angle than a Western knife means less wedging through dense vegetables and cleaner separation in fish and meat. It also means the edge wants attention sooner, which is the reason the sharpener is in the box at all.

In Use

Chop, then touch up at the counter

The santoku asks for a straight up-and-down stroke rather than a rock. When it starts pushing food instead of cutting it, three or four passes through the fine slot put it back: no setup, no stone to soak.

From the sharpening bench

Hold the santoku upright and let its own weight set the pressure in the slot. Leaning on a pull-through sharpener rounds the apex you are trying to rebuild.
