This is the set for anyone whose current knife situation is a loose drawer and a few serrated steak knives. Seven blades cover the daily rotation: an 8-inch chef, an 8-inch bread knife, a 5-inch utility and four steak knives. The eighth piece is the block they live in, which lies flat in a drawer or sits on the counter, whichever your kitchen can spare.

Anatomy of the tool

Set

Seven knives and the block that holds them

The roster is deliberately short. An 8-inch chef for most prep, an 8-inch bread knife for crust and ripe tomatoes, a 5-inch utility for the in-between jobs, four steak knives for the table. Nothing in it sits unused.

Material

EN 1.4116, cryo-tempered to 58 HRC

Every blade is EN 1.4116 high-carbon German steel, hand-sharpened to 15 degrees per side with a tapered edge, then cryo-tempered to 58 plus or minus 2 HRC. That treatment buys up to three times the edge retention of ordinary stainless.

Storage

A black block that lies flat in the drawer

The block is the point of this set. Dust-free and waterproof, with a stain-resistant surface you wipe instead of scrub, and it works in a drawer or on the counter. Spoons, peelers and scissors fit the slots you leave empty.

Grip

Full tang under a palm-contoured handle

Each knife runs full tang, so the steel continues through the handle and the balance point lands where your hand closes. The handles are contoured to the palm with a non-slip grip, which counts for most on the longer blades.

From the sharpening bench

Wipe each blade dry before it goes back in the block. The block is waterproof, but a wet knife sitting in a closed drawer slot is how high-carbon steel picks up spots.
