We make this mitt in grey because grey disappears into a kitchen. Underneath the color it is the same glove as the rest of the family: food-grade silicone, BPA free, cotton lined, heat-safe to 450 degrees F. What you notice first is the fingers. Five separate slots instead of one padded pocket, so you can pinch the lip of a sheet pan rather than clamp at it and hope.

Anatomy of the tool

Heat

Rated to 450 degrees F, cotton on the inside

The silicone shell takes the heat and the cotton lining takes the edge off it, which is the part cheap mitts skip. Cotton on its own gives up well before 450 degrees F, and you feel that failure as a sudden sting.

Fit

One size, and the openings do not stretch

There is one size, and the finger openings hold their shape because silicone does not give. Measure your hand against the listing before ordering. A slot that runs tight will fight you every time you reach into the oven.

Material

Grey forgives a greasy thumbprint

Grey sits between the two extremes. A splash of oil does not read as a stain the way it does on white, and flour does not stand out the way it does on black. The smooth surface repels grease either way.

Care

A swish in soapy water, a hook in the cuff

Drop food on them mid-cook and you can swish them through soapy water without taking anything apart. The silicone side is fully waterproof. The cuff carries a hanging hook, so they dry somewhere you can reach them.

From the sharpening bench

Keep them out of long boiling soaks. Heat accumulates in silicone over time, and a mitt that spends minutes in a simmering pot ages faster than one that only meets dry oven racks.
