Five inches is the odd size in a paring lineup, and it is the one we reach for when a 3.5-inch blade runs out of blade. The Damascus steel is the reason this knife looks the way it does, but the ice quench past 58 hardness is why it still cuts in a year. The outline comes from a shark profile, and the slimness it buys is real: less blade pushing sideways through a firm pear.

Anatomy of the tool

Blade

Five inches of Damascus

The extra inch and a half over a standard parer turns this into a small utility knife: a whole onion, a block of cheese, a sandwich cut in half. The layered steel also gives the face a pattern that no two knives share.

Edge

Hardness under the pattern

Layered steel is easy to sell on looks alone, so we treat it like any other blade in the line: ice quenched past 58 hardness, then ground to a working edge. Keenness first, figure second.

Handle

Black 2.0, no decoration

The handle is the real Ergonomic 2.0 shape rather than a round stick with a logo on it. It locks the hand at one angle, which keeps a 5-inch blade from feeling tippy when you cut toward yourself.

In Use

The in-between knife

Too much blade for strawberry tops, not enough for a cabbage. What it owns is the middle: tomatoes, mozzarella, boneless chicken thigh, the quick cut you make standing over the board without setting anything up.

From the sharpening bench

Hand wash this one even though the dishwasher will not hurt it. Detergent cycles dull the contrast in a Damascus pattern long before they touch the edge.
