A paring knife makes more cuts per week than anything else in the kitchen and gets sharpened the least, because nobody sets up a stone for a small blade. This pairing removes the excuse. The parer is German molybdenum-vanadium steel, ice-quenched past 58 hardness. The sharpener is a pull-through with a dial on the side: pick an angle, make a few passes in one direction, put it away.

Anatomy of the tool

Pairing

The smallest knife and the tool that keeps it

Small blades take the hits: peeling, coring, trimming, opening things they were never designed to open. Shipping the parer next to a sharpener is an admission that this knife wants maintenance more often than the chef knife does.

Blade

58 hardness in a 3.5-inch parer

Ice quenching takes the German molybdenum-vanadium steel past 58 hardness, which on a blade this short shows up as control. You are steering with fingertips, and a hard edge bites into apple skin instead of sliding across it.

Edge

Twist the dial, pull it through

Six angle settings from 14 to 24 degrees sit under one dial, with a guide printed on the body suggesting which to use for which knife. A few passes in each slot, pulling toward you, with no sawing back and forth.

Care

Tungsten for repair, ceramic for upkeep

The coarse tungsten slot resets an edge that has gone blunt; the ceramic slot handles the weekly touch-up that keeps you out of the coarse slot. A third slot takes scissors, and the same tool suits pocket and Japanese knives.

From the sharpening bench

Settle on one dial angle for the parer and write it down. Switching settings between sessions grinds a new bevel each time instead of maintaining the one you have.
