Small kitchens lose drawers to organizers that do one thing. This one holds 10 knives in detachable slots, and when you lift the slot insert out, the same frame becomes a full-size tray for forks and spoons. It stands in for a knife block and a utensil tray at once. The paring knives that come with it are the blades that most often rattle loose in a drawer.

Anatomy of the tool

Pairing

The knives that need slots the most

Paring knives are small, numerous and the first thing to go blunt loose in a drawer, banging against spoons. Shipping them with the organizer means they arrive with somewhere to live instead of joining the pile they would have joined otherwise.

Storage

Ten slots, then a silverware tray

Three bays take 8-inch chef and bread blades, six take 4 to 5 inch steak and fruit knives, and the tenth holds a sharpening stone. Pull the insert out and the frame is a cutlery tray, which is the trick that recovers drawer space.

Blade

Three and a half inches, ice-quenched

The paring blades are German molybdenum-vanadium taken past 58 hardness by ice quenching. That hardness is why they keep a fine point through peeling and coring, and the alloy is what keeps them from spotting over a wet year.

Care

A dull edge usually means bad storage

Blades go dull faster from knocking into other steel than from cutting food. Individual slots stop that contact, and the dust-proof lid keeps the grit out whether the organizer sits in a drawer or stays on the counter.

From the sharpening bench

Measure the drawer before anything else: the frame needs 2.7 inches of clearance under the runners. Park the sharpening stone in its slot so honing happens where the knives already are.
