Small knives take the worst of drawer life. They get tossed in loose, knock against spoons, and go dull long before the chef knife does. So we paired our 3.5-inch paring knives with the organizer built to hold them. Seven slots keep the edges apart, and when you want the drawer back for forks and spoons, the knife insert lifts out in about a second.

Pairing

Why the parers ship with the tray

A paring knife lives in the drawer rather than the block, which is exactly where edges get chipped. Giving the parers a slot each is the simplest way to keep an ice-quenched edge doing what it did on the first day.

Storage

Seven slots, then a cutlery tray

Three of the slots take 8-inch blades, four take 4 to 5-inch ones. Pull the knife insert out and the base becomes a full-size tray for forks and spoons, so one drawer does the job that used to need two organizers.

Blade

Ice-quenched at 3.5 inches

The parers are German molybdenum-vanadium steel taken past 58 hardness by ice quenching. That counts for more on a short blade than a long one: you steer a parer with fingertips, and a dull one slides off apple skin instead of biting.

Care

Lid down between prep sessions

The dust-proof lid closes over the slots and keeps grit off edges that sit unused for a week at a time. On the counter or in the drawer, the 2.7-inch height clears most cabinet openings without measuring first.

From the sharpening bench

Load the long slots with your bread and chef knives before the parers go in. The small blades slide into the short slots blind, and you want the big edges already parked.
