Two knives and a sharpening rod separate this from our 8-piece. Nine blades in black: 8-inch chef, 8-inch bread, 8-inch slicing, 5-inch utility, 3.5-inch paring, four steak knives, plus the rod that keeps them aligned and the 2-in-1 block that holds the lot. The slicer and the paring knife are the additions people notice, one for roasts and one for everything too small for a chef knife.

Anatomy of the tool

Set

Nine knives plus a sharpening rod

Eleven pieces counted honestly: nine knives, one sharpening rod, one block. The additions over a basic set are the 8-inch slicing knife and the 3.5-inch paring knife, which close the gap between carving a roast and hulling a strawberry.

Material

A tapered 15 degree edge on German steel

Blades are EN 1.4116 high-carbon German steel, hand-sharpened to 15 degrees per side and cryo-tempered to 58 plus or minus 2 HRC. The taper behind the edge is why the steel parts food instead of wedging its way through.

Storage

A dust-free block for the deeper roster

Nine knives loose in a drawer is a problem. The block gives each one a slot, stays dust-free and waterproof, wipes clean without staining, and fits inside a drawer or on the counter depending on what you can spare.

In Use

The rod earns its slot between sharpenings

Keep the rod where the knives are and you will use it. A few light passes before a long prep session realign a hand-set 15 degree edge, and that is what keeps cuts clean well before any real sharpening comes due.

From the sharpening bench

Use the rod on the chef and slicing knives, not the serrated bread knife. Serrations are ground differently, and a straight rod only rounds off their points.
