Our second nakiri exists for people who hate scraping potato off a blade. The face is ovalled rather than flat, so slices break away instead of stacking up and sticking, and the polished laminate finish wipes clean in one pass. Steel is high-carbon composite at 56-plus Rockwell, and the engraved handle is double riveted, which is the old way of attaching a handle and still the hardest one to loosen.

Anatomy of the tool

Blade

Oval face, less food sticking

The sides are curved instead of dead flat, which breaks the suction that makes cucumber and potato cling to a tall blade. Over a full board of vegetables that is a dozen fewer stops to clear the face.

Edge

Composite steel, easy to bring back

At 56-plus Rockwell the edge sits in the forgiving range: a few seconds on a stone brings it back, and it does not chip when it runs into the seed cavity of a winter squash. Easy to resharpen is a feature, not a compromise.

Handle

Two rivets and an engraved face

Double riveting fixes the scales against twisting, and the engraving gives the fingers something to register against. The laminated polished surface is there so nothing collects in the seam at the bolster.

In Use

Asian-style prep at home

Cabbage into ribbons, carrots into matchsticks, ginger minced against the board. The flat profile suits anyone who grew up chopping rather than rocking, and the knife drops into a standard block when the board is clear.

From the sharpening bench

Warm soapy water and a towel, even though the dishwasher is allowed. Detergent cycles take the polish off a laminated face and dull a 56 HRC edge early.
