This is the forged sibling of our chef knife, shaped the Japanese way. The 53-millimeter blade height gives your knuckles real clearance over the board, and the wide flat face doubles as a scoop that carries diced onion straight to the pan. The steel is the same German EN1.4116 we trust across the line, ground here to a 14-to-16-degree edge.
