If you own one MAD SHARK knife, it should probably be this one. The 8-inch chef pattern covers ninety percent of what a kitchen asks of a blade, and this build backs it with EN1.4116 steel and an edge our sharpeners set by hand at 15 degrees per side. It slips through a ripe tomato without crushing the skin and still has the spine to break down a whole chicken.

Anatomy of the tool

Blade

Geometry tuned to the cutting zone

The profile widens through the belly where real cutting happens, so rock-chopping herbs or push-cutting onions keeps the whole edge in contact with the board instead of just the tip.

Edge

Fifteen degrees, set by hand

A 15-degree bevel per side is closer to a Japanese grind than a classic Western one. It rewards a light touch: ribeye, raw potato and tomato part without tearing.

Handle

Tang runs to the very end

The steel core continues to the butt of the handle, which is why the balance point sits right at the bolster. The textured grip holds even with wet or greasy hands.

In Use

One knife, most of the prep

Sashimi-grade salmon, roast turkey, brisket trim, pork shoulder — this is the blade that stays on the board from the first cut of prep to plating.

From the sharpening bench

Steel it before each long session, not after. Ten light passes on a honing rod keep the 15-degree edge aligned, and you will go months between real sharpenings.
