Cooks kept asking for our hard-steel santoku in a slightly different balance, so this version exists. The metallurgy is unchanged — high-carbon German steel taken past 58 Rockwell with an ice quench — but the handle geometry shifts the weight a touch rearward, which suits cooks who choke up on the grip rather than pinch the blade.
